Veggie Chinese pancakes

Pancakes are a type of flatbread that is popular in many cuisines. They can be made with a variety of different flours, and they can be either savoury or sweet.

This dish is simple to make and can be easily customised to your liking. The pancakes are soft and fluffy, and they make a great base for other dishes such as stir-fries or sandwiches.

Ingredients:

200g mushroom , sliced (we used chestnut)
2 tbsp soy sauce
½ tsp five spice powder
1 tbsp rice wine , preferably Shaohsing
½ tbsp sesame oil
1 tsp sugar
6 Chinese pancakes
2 spring onions , finely sliced
5cm length cucumber , deseeded and sliced into matchsticks
½ Little Gem lettuce , shredded
4 tbsp hoisin sauce



Instructions:

1. In a bowl, mix together the mushrooms, soy sauce, five spice powder, rice wine, sesame oil and sugar.

2. Heat a frying pan over a medium heat and cook the mushrooms until they are soft and most of the liquid has evaporated.

3.Lay out a pancake and spread over some hoisin sauce. Top with a few slices of mushroom, some spring onions, cucumber and lettuce.

4. Fold over the pancake to enclose the fillings and repeat with the remaining pancakes. Serve immediately.

Tip
If you can’t find Chinese pancakes, you can use normal pancakes or even wraps.

I prefer to make a light crepe with a smoked salmon and dill filling
