Vegetable and Basil Salad

I can live on vegetables and salads.
I wanted to share one that I love.
Serves 6 as a side
Serve with a protein eg chicken or fish

Ingredients
250g asparagus, trimmed and cut into 4cm lengths
150g snow peas, trimmed and halved diagonally
1 small red oak lettuce, torn ( or lettuce if choice)
400g can white beans, rinsed and drained
250g cherry tomatoes
200g fetta cheese crumbled
1 cup loosely packed basil leaves
Basil Dressing
2 tablespoons finely chopped Basil
1/4 cup olive oil
2 tablespoons white wine vinegar
1 tablespoon lemon juice
1 teaspoon Dijon mustard
Method
1. Boil steam or microwave asparagus and snow peas, separately until just tender; drain. Rinse under cold water; drain
2. Meanwhile, place Basil dressing ingredients in a screw top jar; shake well.
( I always use this jar for dressings, can also be made and kept in the jar in fridge)
3. Arrange lettuce on a platter; top with asparagus, snow peas and beans, drizzle with 1/4 of the dressing. Arrange tomatoes, cheese and Basil on top, drizzle with remaining dressing.
Notes
1. Beans you can use Cannellini, butter and haricot beans
2. If you want to use other tomatoes you can , I gave also used Medley tomatoes and whole tomatoes
with whole tomatoes cut them in bite size pieces
3. I love using red oak lettuce but have also used baby cos and other lettuces
4. You can add other salad vegetables eg cucumbers ect
