Upside Down Pastries

Apparently these upside down pastries are going viral on tik toc. My 18 year old made these last week, and they were so delicious and easy to make as well as unlimited options

Ingredients​

  • 1 puff pastry sheet

Italian Pastries​

  • 2 teaspoon basil pesto
  • 2 large sundried tomato pieces ( I will just place tomato cut in half in the oven , cook then smash )
  • 4 teaspoon finely grated parmisan cheese
  • 2 heaped tablespoons of Mozzarella cheese
  • Garnish - basil leaves, extra virgin olive oil and red pepper flakes

Apple Pie Pastries​

  • 1 red or green apple peeled and cut into thin slices
  • 3 teaspoon honey
  • Sprinkle of cinnamon
  • Garnish - icing sugar and optional spoon of vanilla ice cream

Instructions​

  • Preheat the oven to 200℃ 180C fan forced and line a baking tray with a sheet of baking paper.
  • Cut the puff pastry sheet into 4 even squares and spread a teaspoon of pesto on the middle of the savory squares, leaving a border around them
  • Italian - Add 2 teaspoons of the parmesan cheese to the baking paper in a rectangle shape then place a sun dried tomato directly on top of the cheese

    Apple Pie - Add a teaspoon of the honey to the other side of the baking paper in a rectangle shape. place half of the apple slices directly on top of the honey, overlapping them in a rectangular row. Sprinkle the apple with cinnamon and drizzle over half a teaspoon of honey
  • Place the puff pastry square on top of the ingredients. Using your fingers, gently press the pastry around the filling to remove any air. Using a fork, press the sides of the pastry around all the edges to seal it closed

    Repeat the above step for the remaining half of the ingredients on the other side of the baking sheet, leaving room in between them
  • Bake in the oven for 8-10 minutes until the puff pastry has risen and is golden and crispy. Then using a spatula, flip over the puff pastries Garnish the apple pie puff pastries with a dusting of icing sugar

    Garnish the Italian puff pastries with a heaped spoon of cream cheese , olive oil, basil leaves and red pepper flakes. Enjoy your upside down puff pastries!

There is so many options , ricotta or fetta cheese would go well
Chopped bacon and cheese
Canned Apricots or pineapple instead of apple
