I remain flabbergasted by the stupidity of wine salesmen in promoting wines. In their sales talk about wines they list all the subtle characters and nuances of the wines (almost all of which are way over the top and irrelevant to the wine-drinking populace) and THEN they promote pairing the wine with a cheese such as a blue vein. Have these people ever eaten blue vein cheese and then tried to elicit the subtle characters of the wine?? I very much doubt it !! Their comments likely comes from some publication that is equally ignorant of the fact that the blue vein cheese effectively masks all the character of a good wine. The same goes for other strongly flavoured cheeses.
