Turkish Apple Pastries
Delicate, buttery pastries filled with a warm spiced apple mixture—these Turkish treats
are perfect with a cup of tea or coffee. Simple to make yet utterly irresistible!
Ingredients For the Dough:
• 250g plain flour (approx. 2 cups)
• 125g butter, cubed (½ cup + 1 tbsp)
• 50g icing sugar (⅓ cup)
• 1 small egg
• 50g yoghurt (3 tbsp)
• 1 tsp baking powder
• 1 tsp vanilla extract
For the Filling:
• 2 medium apples, peeled and grated
• 2 tbsp sugar
• ½ tsp cinnamon
• 30g chopped walnuts (optional, about ¼ cup)
For Dusting:
• Icing sugar
Method
1. Prepare the Dough:
In a mixing bowl, combine the flour, butter, icing sugar, baking powder, and vanilla extract.
Rub the mixture between your fingers until crumbly. Add the egg and yoghurt, then knead
briefly until a smooth dough forms. Wrap in cling film and chill for 30 minutes.
2. Make the Filling:
In a pan over medium heat, cook the grated apples with sugar and cinnamon until the liquid
evaporates. Stir in the walnuts if using, then allow the mixture to cool completely.
3. Shape the Pastries:
• Divide the dough into 14 equal pieces (about 30g each).
• Roll each piece into an oval on a lightly floured surface.
• Place a teaspoon of the apple filling near the bottom edge.
• Use a knife or pastry roller to cut strips into the upper part of the dough.
• Roll up from the bottom to form an elongated shape.
• Arrange on a baking tray lined with parchment paper.
4. Bake:
Preheat the oven to 180°C (fan-assisted) / 350°F.
Bake for 20–25 minutes, or until lightly golden.
5. Finishing Touch:
Allow the pastries to cool completely, then dust generously with icing sugar.
Serving Tip
These pastries taste wonderful fresh out of the oven but are even better the next day when
the flavours develop further. Perfect for an afternoon treat or a sweet snack anytime!
