This is another great easy tray bake and budget friendly .

Hints
1. Pork sausages are best but you really can use sausages of choice eg beef
2. 750g is around 8 fat sausages
3. If you don't have fennel or don't like it just leave it out
4. Use a large baking dish or two smaller ones. Don't pile high as it won't brown.
5. Don't leave out oil, lemon juice or garlic

Ingredients
- 750 g pork sausage or beef (see hint below)
- 2 fennel bulbs thickly sliced trimmed
- 2 red onions cut into wedges
- 3 roma tomatoes quartered
- 1 red capsicums deseeded cut into chunks
- 750 g new potato cut into wedges skin on
- 3 tbs olive oil
- 3 tbs lemon juice
- 3 garlic cloves crushed
Method
- Preheat oven to 180C or 160C fan-force.
- Place sausages and vegetables on a large roasting tray.
- Combine oil, juice and garlic in a bowl. Season. Pour over tray and toss to coat.
- Roast for 1 hour, turning sausages halfway through.
