Trail Mix Biscuits

Ingredients

• 255 gms traditional rolled oats
• 40 gms shredded or flaked coconut - Note 1
• 3/4 cup mashed banana - Note 2
• 120 gm tub of apple purée
• 125 mls olive oil - Note 3
• 80 mls maple syrup
• 2 teaspoons vanilla extract
• 1 egg - lightly whisked
• 1/2 teaspoon mixed spice
• 65 gms dark chocolate chips - Note 4
• 65 gms sultanas
• 60 gms pepitas
• 50 gms dried cranberries - chopped

• Note 1 - desiccated coconut will make biscuits very dense
• Note 2 - 1 large banana will yield 3/4 cup
• Note 3 - I use Rice Bran oil
• Note 4 - Use whatever chocolate chips you have on hand

Method

Step 1
• Preheat oven to 180•C or 160•C for Fan Forced. Line 2 baking trays with baking paper
Step 2
• Place 35 gms of rolled oats and 2 tablespoons of coconut in a bowl, stir to combine
Step 3
• Place banana, apple, syrup, oil, vanilla, egg, mixed spice, remaining rolled oats and coconut into a large bowl. Stir to combine. Add pepitas, sultanas and chocolate chips, mix through.
**Allow mixture to set aside for 10 minutes to rest**
Step 4
• Place 1/4 cupfuls of the mixture 4cm apart on prepared trays. Sprinkle with the rolled oats coconut mixture. Bake 25 minutes or until golden. Set aside on the trays for a further 10 minutes to cool slightly, before transferring to a wire rack to completely cool
• These will be quite large biscuits, if you prefer use a tablespoon
