Takeaway Chinese Fried Rice

I make so many rice dishes including fried rice and I have to say this one is really delicious 😋 it's my personal kind of food

Ingredients​

  • 4 cups white rice cooked
  • 2 garlic cloves finely chopped
  • 2 cm fresh ginger peeled julienned
  • 6 shallots thinly sliced
  • 1 cup frozen mixed vegetables boiled drained
  • 2 eggs beaten
  • 2 tbs light soy sauce
  • 1 tsp salt
  • 1/2 tsp pepper
  • 4 tbs oil

METHOD

  1. In a wok over medium heat up the cooking oil.
  2. Beat the eggs with a good pinch of salt and a small pinch of pepper.
  3. Add the garlic and ginger, and stir fry until fragrant. Add the sliced onion and fry until soft and caramelised.
  4. Add the rice, break up the lumps and stir fry until rice is loose.
  5. Add in the light soy sauce, pepper and mixed vegetables to stir fry and mix well.
  6. Push the rice to one side and pour the beaten egg into the vacant part of the wok. Bury the egg with the rice and leave for 10 to 15 seconds.
  7. Fry for a further minute while mixing together.

NOTES​

Cooked rice left to cool overnight is preferred because it is firmer and not so starchy.
You can use basmati rice, but preferably ordinary long grain rice.
Shredded roast pork, chicken and crab meat can be added to this basic recipe

I also make another fried rice

4 cups Cooked rice
1 large chopped onion
3 eggs beaten
4 shallots sliced
200g peeled prawn ( fresh, frozen ) I have also used can ones
1 small capsicum finely chopped
150g diced bacon
150g diced ham
1/4 cup soya sauce
Can peas optional

1.Cook eggs omelette style then slice thin

2. Fry onion until soft. Add bacon and ham, cook until lightly brown.

3.Add capsicum, cook for 3 minutes

4. Add cooked rice and prawns. Using to forks gently stir through .

5. Add soya sauce and stir through again the sliced egg
Add shallots on top and serve

I like using frozen vegies with stir fries. I microwave them for a few minutes, then add them.
Pleased I diced some spring onions for the freezer, as no stock this morning at the supermarket due to the wet conditions for farmers.

I will make the first recipe and then the second - my family are loving all this variety 👍

Used to always make home-made fried rice since our neighbour June showed me as a kid, till I had to make it weekly for 240 uni students for 3 years, still do occasionally many variations can be made to spice it up, try a touch of sesame oil also, only small amount to start can be overpowering or a bit of south east asia, fish sauce, be really careful with this stuff. I always wok egg first and set aside add at end to warm thrue.
