Sweet & Tangy Salmon with Green Beans

I love easy quick recipes especially when I'm cooking two different meals each night.

Hubby has Diabetes and I make him different meals to the rest of the family Salmon and fish is something he has maybe 4 times a week.

This recipe is quick n easy and most importantly he loves it.

Ingredients

  • 4 salmon fillets ( I use either fresh or frozen) around 150g each
  • 1 tablespoon butter
  • 2 tablespoons brown sugar
  • 2 tablespoons low salt soy sauce
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 1/2 teaspoon pepper
  • 1/8 teaspoon salt
  • 800g fresh green beans, trimmed
Also I steam carrots and broccoli to serve with this

Directions

  1. Preheat oven to 190°C / 170°C fan-forced . Place fillets in a 15x10x1-in. baking pan coated with cooking spray. In a small skillet, melt butter; stir in brown sugar, soy sauce, mustard, oil, pepper and salt. Brush half of the mixture over the salmon.
  2. Place green beans in a large bowl; drizzle with remaining brown sugar mixture and toss to coat. Arrange green beans around fillets. Roast until fish just begins to flake easily with a fork and green beans are crisp-tender, 14-16 minutes.

    NOTES
    • Craving Asian flavors? Add 1/2 teaspoon minced fresh ginger to the sauce and use sesame oil instead of olive oil.
    • It's wise to buy salmon fillets that are the same thickness so they cook evenly.
