Sweet Potato, Eggplant and Chickpea Hotpot

This is such an easy and quick non meat meal.

Prep time 10 min
Cook time 25 min
Serves 4
Ingredients
400g can chickpeas, rinsed and drained
1 tbsp chopped parsley
1 tbsp oil
1 onion, chopped
2 cloves garlic, crushed
1 long red chilli
1 tsp smoked paprika
2 medium sweet potatoes, cubed
1 medium eggplant
, trimmed, chopped
1 1/2 cups timato passata
2 cups water
Method
1. Heat oil in a large saucepan. Cook onion for 5 minutes until soft. Add garlic, chilli and paprika and cook for 1 min,until fragrant
2. Stir through sweet potato, eggplant
, tomato passata and 2 cups of water. Bring to boil, then reduce heat and simmer 15 minutes. Add chickpeas and simmer a further 19 min.
3. Stir through parsley and serve with fresh crusty bread
