Sweet potato and Spinch Muffins

These make a nice lunch served with salad

Ingredients
1 bunch of spinach leaves , chopped , you can use large packet baby spinach
1 1/2 cups plain flour
3 Teaspoon baking powder
1 large orange sweet potato, peeled and grated
1/3 cup parmesan cheese
2 Eggs
1/3 cup milk
2 Tablespoon olive oil
1 Large red tomatoe finely chopped.
Method
1. preheat oven 180 C or 160 C fan-forced. Grease a 12 hole muffin tin or line with muffin cups.
2 .place spinach in a large bowl abd cover with boiling water for a few minutes then drain, when cooled squeeze out excess water..
3. In a large bowl , sift flour and baking powder. Add spinach, grated sweet potato, chopped tomato and parmesan cheese ..
4. In a bowl, Whisk together eggs , milk and oil.
5. Add wet ingredients to dry ingredients and stir until just combined, being careful not to over mix.
6. spoon mixtureinto muffin tray filling to 3/4 way up .
7. Bake in oven for 20 minutesor until golden in colour and a skewer inserted comes out clean .
Note ; You can use / add other vegetables, eg grated zucchini, peas, grated carrots, corn ect
