Summer berry trifle​

Ingredients
  • 1 x 85g pkt Strawberry jelly crystals

  • 14 bought jam rollettes, cut into 1cm-thick slices

  • 80ml (1/3 cup) apple juice or sweet sherry

  • 2 x 250g punnets strawberries, washed, hulled, halved

  • 2 x 150g punnets blueberries

  • 500ml (2 cups) vanilla custard

  • 250ml (1 cup) Thickened Cream, whipped

Step 1
Prepare the jelly following packet directions. Pour into a large container and place in the fridge for 1 hour or until set. Coarsely chop.

Step 2
Place half the rollettes in the base of a 3L (12-cup) capacity serving bowl. Drizzle half the apple juice or sherry over the rollettes. Top with half the jelly and one-third of the combined strawberries and blueberries. Spoon over half the custard. Repeat with the remaining rollettes, apple juice or sherry, jelly and half the remaining strawberries and blueberries. Top with the remaining custard.

Step 3
Spoon the cream over the trifle and top with the remaining strawberries and blueberries. Place in the fridge until required.

What are the layers of a trifle?​

Though recipes vary, in a classic Australian-style Christmas trifle you'll generally find jam roll or sponge soaked in sherry, jelly, custard and cream. Often there'll also be fruits, blanched almonds and other fun additions like shaved chocolate or glace cherries to top. And yet, we have many trifle recipes that prove you creativity is the limit.

What other alcohol can you use in trifles?​

You can always swap sherry for a sweet vermouth or a splash of port, or use a little rum to spike your trifle.

What can you use in a non-alcoholic trifle?​

If you'd like to make an alcohol-free trifle, the best liquid to add would be apple juice. This recipe suggests apple juice as a suitable substitute for sherry. You can of course use other fruit juices, but the sweetness of apple works well.
