Stuffed Sweet Potato

I've been working on recipes that are nutritious and quick to make .
I've also been finding I've been cooking for two, I want to share a few of these recipes over the coming days.

INGREDIENTS
Olive oil spray
2 sweet potatoes
1 large ripe avocado
1 small can red kidney beans
juice of 1 lime, plus 2 wedges or 2 tablespoons of bottle lime juice
Chilli flakes to taste ( leave out if you don't like chilli )
2 tomatoes, finely chopped
⅓ small bunch of coriander leaves roughly chopped you can substitute with flat leaf parsley
1 small red onion, finely chopped


METHOD
Heat oven to 220°C. Spray sweet potatoes with oil and place in the oven for 45 minutes or until tender all the way through when pierced with a knife.

Meanwhile, mash avocado with the lime juice in a small bowl, add chilli flakes, tomatoes, coriander and onion. Season with salt and pepper.

Cut the potatoes in half and top with the kidney beans and guacamole. Serve with the lime wedges for squeezing over.

OPTIONAL SUGGESTION
Top with ½ can red kidney beans This is additional to above ammount

Serves 2

Serve by itself or with a Garden Salad

All recipes on this site come up really huge, why is this??? I have to make so much smaller before saving for my recipe file.
