This is an old recipe I used to bake for my kids.
Strawberries are cheap at the moment.
Passionfruit can be expensive, so I used a small can of John West passionfruit.
1 3/4 cup Self-raising flour
1 teaspoon baking powder
1/4 cup caster sugar
1 cup chopped fresh strawberries
1/2 cup fresh (or canned) passionfruit pulp
1 egg
3/4 cup milk
60g butter, melted
Sift flour, baking powder, sugar in a large bowl. Add strawberries and stir to combine.
Mix a well in the centre.
Add passionfruit and combined egg and milk, then pour the melted butter into the flour mixture.
Lightly stir with a fork until just combined.
Spoon mixture into a 12 hole muffin pan.
Oven 190 degrees fan forced or 210 degrees
Bake for 10 - 15 minutes or until brown.
