Spinach and ricotta quiche

My brother asked me for some budget recipes and this is one I shared with him
It's so delicious and easy to make.

Recipe by Australia's Best

Ingredients​

  • 1 brown onion chopped
  • 3 garlic cloves diced
  • 1 tbs olive oil
  • 4 eggs
  • 250g frozen spinach defrosted squeezed
  • 250g ricotta
  • 1/2 cup cream
  • 1/2 cup cheddar cheese grated
  • 1/2 cup milk
  • 1 pinch salt and pepper
  • 2 sheets puff pastry

Method​

  1. Preheat oven to 180C or 160°C fan-forced
  2. In a frying pan, heat the oil. Add the onion and garlic and fry, stirring, until soft
  3. In a mixing bowl, beat the eggs, add the spinach, ricotta, tasty cheese, cream, milk, salt and pepper, onion and garlic, and mix thoroughly.
  4. Lay the puff pastry in a greased pie tin, fill with the egg mixture and bake for 35 minutes.

An easy and very nice dish , I keep always some ricotta or cottage cheese in the freezer , so versatile. I only would leave out the cream and use more milk, egg or cheese . Thank you for sharing .
