Spinach and Egg Stir-Fry

Ingredients:

1 tablespoon vegetable oil
2 cloves garlic, minced
1/2 pound fresh spinach, washed and drained
2 eggs, beaten
1 teaspoon soy sauce
1/2 teaspoon sesame oil
Salt and pepper to taste

Instructions:

Heat the vegetable oil in a wok or large skillet over medium-high heat.
Add the minced garlic and stir-fry until fragrant (about 30 seconds).
Add the spinach to the pan and stir-fry until wilted (about 2 minutes).
Push the spinach to one side of the pan, add the beaten eggs to the open side, and scramble them lightly.
Once the eggs are set, mix them with the spinach.
Season with soy sauce, sesame oil, salt, and pepper.
Serve hot with rice or noodles.
