Ingredients
- 3 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon pepper
- 1/4 teaspoon salt
- 2 boneless skinless chicken breast cut into halves horizontally
- 2 teaspoons olive oil
- 1 can black beans, rinsed and drained
- 1 can corn
- 1 cup salsa homebrand is good
- 2 cups hot cooked brown rice
- Chopped fresh coriander for serving, optional
Directions
- In a small bowl, mix seasonings; sprinkle over both sides of chicken. In a large frypan , heat oil over medium heat. Brown chicken on both sides.
- Add beans, corn and salsa to pan; cook, covered, 10-15 minutes or until chicken is cooked and no longer pink
- Slice chicken and Serve with rice and if using garnish with coriander .
