Spiced Orange Cake

This is such a delicious cake
A little history of this cake.
The Greeks would make this cake if they lost an item and they believed by making it they would find their item .
On the eve of August 27th , many Greek Orthodox homes are baking this cake . It commemorate the Holy Martyr, Saint Fanourios the Saint for “lost things”.
Serves 10- 12 slices.

INGREDIENTS
2 cups self raising flour.
1/2 cup caster sugar.
3/4 cup chopped walnuts.
1/2 cup chopped raisins
1 tsp ground cinnamon.
1/2 tsp ground cloves.
1 cup extra virgin olive oil or light.
1/2 tsp bicarbonate soda.
1 cup orange juice.
Method
Preheat your oven to 170C. 160C fan forced
I . In your bowl, add the orange juice and bicarbonate soda and whisk until it froths and bubbles.
2. Pour in the olive oil and sugar and stir to combine well. Add the flour and spices and stir to create the batter then fold in the walnuts and raisins.
If you’re using a Bundt tin, ensure you grease and flour it very well. If using a standard 8” (20cm) spring form cake tin, grease and line with baking paper. Pour in the batter and bake for approximately 30-40 minutes or until a skewers comes out clean.
Allow it to cool completely before sprinkling with icing sugar and enjoy.
