Spaghetti with roasted red peppers spinach and pine nuts how good is that
INGREDIENTS
Ingredients for 6 people- 1 box Barilla® Blue Box Spaghetti
- 5 tablespoons extra virgin olive oil
- 2 garlic cloves, chopped
- 2 jars roasted peppers, sliced thin
- 1 bag baby spinach
- Salt and black pepper to taste
- ½ cup Pecorino cheese, shredded
- ½ cup pine nuts, toasted
INSTRUCTIONS
- Bring a large pot of water to a boil
- Meanwhile in a large skillet sauté garlic in olive oil for 1-2 minutes, then add peppers and turn the heat to high
- Sauté for 3-4 minutes then season with salt and pepper
Drain and toss the pasta with the roasted peppers and spinach
Remove the skillet from the heat and fold in half the cheese
Top with remaining cheese and pine nuts
