Somerset stew with cheddar & parsley mash

This is a hearty and delicious stew that is perfect for a cold winter’s day. The stew is packed full of flavour and is very easy to make. This dish is usually served with a side of mashed potatoes.

Ingredients:

1 tablespoon olive oil
1 onion, chopped
3 garlic cloves, minced
500g of sausages of your choice
1 cup diced carrots
1 cup diced celery
1 cup diced potatoes
1 leek chopped
1 cup beef stock
1 cup water
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/4 teaspoon pepper
1/4 cup chopped fresh parsley
1/2 cup grated cheddar cheese
1/2 cup of light cream


Method:

1. In a large pot, sauté onion, garlic, and lamb in olive oil.

2. Add carrots, celery, sausages, leek, beef stock, water, Worcestershire sauce, salt, and pepper.

3. Bring to a boil and then simmer for 1-2 hours, or until the vegetables are cooked through.

4. Boil potatoes with salted water until soft. Strain them and mash them.

5. Add 1/2 cup of light cream, 1/2 cheddar cheese and 1/4 cup of chopped fresh parsley to the mash. Stir through.

6. Once vegetables are cooked through and the mash is complete, serve the stew on top of the mash!
