Slow Cooker Lamb Shanks

I love dishes you can cook in the morning and let it cook on slow all day. Well this is one of those and needs minimum ingredients and is so soft and very tasty

Ingredients​

  • 4 lamb shanks fat trimmed
  • 45g vegetable soup mix ( see picture below)
  • 400g canned diced tomato

Method​

  1. Brown shanks in a pan, transfer to slow cooker bowl, sprinkle over soup and add tomatoes.
  2. Cook in a slow cooker on high 4 hours or low for 8 hours. ( see note below for other cooking methods)
  3. Check during cooking and if needed, add a small amount of hot water.

Serve with steamed vegetables or on a bed on rice


Note

I have skipped the browning step and slow cooked for 8 hours

If you have a slow cooker use this otherwise cook in preheated oven in an oven pan with lid or cover with foil on 120°C or 100 °C fan-forced

You can also cook on stove top. After browning add ingredients, cover with lid and turn temperature down to low and cook 6 hours
