Slow Cooker Gravy Beef Stew

Here are the ingredients you need:
1. Two tbsp of olive oil
2. 1.5 kg of gravy beef, cut into 4cm pieces
3. Two brown onions, finely chopped
4. A large carrot, peeled, finely chopped
5. A celery stick, finely chopped
6. Three garlic cloves, finely chopped
7. 70g of tomato paste
8. A 440ml can of stout
9. 185ml of chicken stock
10. Six fresh thyme sprigs
11. Three dried bay leaves
12. A tbsp of brown sugar
13. Chopped parsley leaves, to serve
14. Six slices of French stick (baguette)
15. 100g of pizza cheese
Start by heating some oil in a large frying pan over high heat. Then, add the beef in batches, and cook them for about 5 minutes per batch or until they turn golden brown. Transfer them to a plate.
Add the onion, carrot and celery to the pan. Reduce the heat to medium and let them cook for 8 minutes or until softened. Add the garlic and cook it for a minute or until aromatic. Finally, add the tomato paste and cook for another minute. Carefully stir in the stout before transferring the mixture to a slow cooker.
Add the stock, thyme, and bay leaves to the slow cooker and stir to combine. Cover and cook on high for about 4 hours or until beef is tender. Sprinkle in some brown sugar and season with salt and pepper. Serve with some parsley and a cheesy baguette if using.
