Slow cooked Moroccan Chicken

I love one pan dishes but I also love slow cooked food, that you can prepare in the morning and no rushing around at night.

I have added easy rice recipes in cooking section
If you don't have a slow cooker then do the steps the same only using a saucepan on the stove. Bring to boil then turn down low and simmer with lid on for around 6 hours

Ingredients
- 4 medium carrots, sliced
- 2 large onions, halved and sliced
- 1 whole chicken or pieces of choice chicken around 1.5kg cut up, I use thigh fillets
- 1/2 teaspoon salt
- 1/2 cup chopped dried apricots
- 1/2 cup raisins
- 375 mls or 1 1/2 cups chicken stock
- 1/4 cup tomato paste
- 2 tablespoons plain flour
- 2 tablespoons lemon juice
- 2 garlic cloves, minced
- 1-1/2 teaspoons ground cumin
- 1 teaspoon ground cinnamon
- 3/4 teaspoon pepper
Directions
- Place carrots and onions in a greased slow cooker. Sprinkle chicken with salt; add to slow cooker. Top with apricots and raisins. In a small bowl, whisk stock, tomato paste, flour, lemon juice, garlic and seasonings until blended; add to slow cooker.
- Cook, covered, on low until chicken is tender, 6-7 hours. Serve with hot cooked rice .
