Slow Cooked Lamb Chops

I love slow cookers , you can prepare and cook in your slow cooker and forget about it until it's time to eat.
I love that you can also cook cheaper bits of meat and you won't even know.

For this recipe we are using lamb forequarter chops

Serves 2

Ingredients​

  • 1 tbs olive oil
  • 500g lamb chops
  • 1 medium onion sliced
  • 1/2 red capsicum sliced
  • 1 clove of garlic crushed
  • 1 1/2 cups Beef Stock
  • 1/2 cup of dry red wine or extra 1/2 cup of beef stock
  • 2 tbs tomato paste
  • 1 tsp mixed herbs
  • 1 large potato chopped into chunks
  • 1/3 cup fresh parsley chopped
  • 400g can cannellini beans drained
  • Salt and pepper to taste

Method​

  1. Heat 1 tbs of oil in a large frypan . Add chops and fry until browned Remove from pot and stand aside.
  2. In the same pot, heat remaining oil, add the onion, potatoes, beans,capsicum and garlic. Stir and cook for a few minutes. Stir in stock, wine and tomato paste. Season with the herbs, pepper and salt, bring to the boil
  3. Add the fried chops to a slow cooker and pour stock and vegetable mixture carefully over chops. Cover with lid. Cook for 6 hours on high then simmer on low until ready to serve

Serve with steamed vegies of choice​


NOTE

If you dont have a slow cooker this can be cooked in the oven .
place in a baking dish , cover with foil and cook in preheated oven 180 C or 160 C fan-forced for 1 1/2 hours
