Slow Cooked Lamb Chops

I love slow cookers , you can prepare and cook in your slow cooker and forget about it until it's time to eat.
I love that you can also cook cheaper bits of meat and you won't even know.
For this recipe we are using lamb forequarter chops
Serves 2

NOTE
If you dont have a slow cooker this can be cooked in the oven .
place in a baking dish , cover with foil and cook in preheated oven 180 C or 160 C fan-forced for 1 1/2 hours

Ingredients
- 1 tbs olive oil
- 500g lamb chops
- 1 medium onion sliced
- 1/2 red capsicum sliced
- 1 clove of garlic crushed
- 1 1/2 cups Beef Stock
- 1/2 cup of dry red wine or extra 1/2 cup of beef stock
- 2 tbs tomato paste
- 1 tsp mixed herbs
- 1 large potato chopped into chunks
- 1/3 cup fresh parsley chopped
- 400g can cannellini beans drained
- Salt and pepper to taste
Method
- Heat 1 tbs of oil in a large frypan . Add chops and fry until browned Remove from pot and stand aside.
- In the same pot, heat remaining oil, add the onion, potatoes, beans,capsicum and garlic. Stir and cook for a few minutes. Stir in stock, wine and tomato paste. Season with the herbs, pepper and salt, bring to the boil
- Add the fried chops to a slow cooker and pour stock and vegetable mixture carefully over chops. Cover with lid. Cook for 6 hours on high then simmer on low until ready to serve
Serve with steamed vegies of choice
