Slow Cooked Chicken n Peppers

Apart from one pot dinners I love Slow cooked meals.

I made this for the first time last week and it was a huge hit.

Slow-Cooked Chicken a la King

Ingredients​

  • 1 can reduced-fat reduced-sodium condensed cream of chicken soup, undiluted
  • 3 tablespoons plain flour
  • 1/4 teaspoon pepper
  • Dash cayenne pepper
  • 500g boneless skinless chicken breasts, cubed
  • 1 celery stick, chopped
  • 1/2 cup chopped green capsicum
  • 1/4 cup chopped onion
  • 1 package 250g frozen peas, thawed
  • 2 tablespoons diced pimientos, drained
  • Hot cooked rice

Directions​

  1. In a slow cooker, combine soup, flour, pepper and cayenne until smooth. Stir in chicken, celery, capsicum and onion.
  2. Cover and cook on low for 7-8 hours or until meat is no longer pink. Stir in peas and pimientos. Cook 30 minutes longer or until heated through. Serve with rice.

    1 cup chicken mixture: 174 calories, 3g fat (1g saturated fat), 44mg cholesterol, 268mg sodium, 16g carbohydrate (6g sugars, 3g fiber), 19g protein. Diabetic Exchanges: 2 lean meat, 1 starch.

love how easily so many of the respondents can be hooked by a single statement (turning the meat). But I know that you are just meaning to be helpful

I always thought that the middle of the Gold Coast Hinterland was hillbilly or goat country especially after having to toss over $1000 worth of food last week. 13 days without power. The other problem I have with slow cookers is that they are best for families - not for singles (or even couples)
They are perfect for singles and couples plus you can portion up meals and freeze them. That’s what I do with mine I’m single and my elderly neighbour does the same and she’s also single.😊

I’m just about to put my football sized pumpkin into mine to slow cook for pumpkin soup. 🤣

What a waste of energy. 4 minutes in the microwave and the soup will be as good as yours

What soup🤔 anyway I have severe arthritis so I can’t cut up veggies etc. ever tried cutting up pumpkin anyway, you need a chainsaw it’s that hard..🤣

I hadn’t even thought of that! Thank you for the idea. I’m a lazy cook, but do enjoy a homemade pumpkin soup. Even though it’s expected to be 41 degrees today; thankfully aircon to the rescue! 😉
Oops…@littleboy8, I didn’t mean to suggest you are a lazy cook like myself. I just dislike all that chopping prep.

It's becoming popular up here. First one butcher, then another and now a few. You even have the choice of skin off or skin on. The last appears more popular - heavens knows why
