Ingredients
- 3 eggs
- 375ml evaporated milk
- 2 x 210g tins pink salmon
- 1 1/2 cups cooked rice
- 2 zucchini, grated
- 1 1/2 cups grated tasty cheese
- 1 tbsp dill
Method
- Preheat oven to 180C. Grease a deep 20cm square baking dish.
- Whisk eggs and milk together in a large bowl. Drain salmon and break into chunks, removing any large bones. Add to egg mixture with rice, zucchini, 1 cup cheese and dill. Season well with salt and pepper, and stir to combine. Pour into prepared dish and sprinkle over remaining cheese. Bake for 35 minutes until golden and just set.
- Cut into squares and serve.
