Roast Vegetables A Dish Of Goodness

I have said before I love tray bakes especially on days when you are in a hurry.
This one is a vegetable bake , which you can basically use any vegetables , a great way to use up all those vegetables in the fridge

Simply add to your baking dish
1 sliced onion.
3 chopped cloves of garlic.
2 large potatoes cut into chunks.
2 large sweet potatoes cut into chunks.
2 zucchini’s cut into chunks.
1 large head of broccoli, cut into florets.
3 carrots cut into chunks.
1 red capsicum Sliced
1 can rinsed chick peas.
For the sauce combine:
1 can or 400g crush tomato.
1/2 cup extra virgin olive oil.
2 tsp dried oregano.
1 tablespoon Greek garlic steak seasoning (from coles in herbs section)
Salt n pepper to taste.
3/4 cup water.
METHOD
1. Add vegetables to baking dish
2. Mix sauce ingredients together and Pour the sauce over the tray of veggies and cover with a layer of baking paper and tightly cover with aluminium foil. Bake at 200 C or 180C fan forced 40 minutes or until potatoes are cooked. Uncover and cook for additional 15-20 minutes to develop colour.
Serve as a meal or side dish to meat. I will sometimes cook sausages or lamb chops to go with this
