This is a restatement of the Epimenides paradox: All Cretans are liars.
What needs to be understood is that the opposite of "all chickens are liars" is not "all chickens are honest" but, rather "not all chickens are liars".
Therefore, the statement by this talking chicken could be true.

Chickens only speak 'Chicken'. You have written it in English, so assuming you speak 'Chicken', then: All chickens can't be liars if that particular chicken is telling the truth. Then NOT all chickens are liars. If that chicken is lying then NOT all chickens tell the truth. Something like that. Now I'm confused.
