Ricotta Tartlets

These are so simple to make for lunch or dinner, served with a tossed salad
Makes 12
You can also do a variety by using Fetta instead of ricotta
Another variation is Roast pumpkin , fetta and parsley

Ingredients
2 sheets ready rolled puff pastry
150g ham, chopped
2 tomatoes thinly sliced
2 tablespoons chopped chives
125g ricotta cheese
3 tablespoons freshly grated Parmesan cheese
3 eggs lightly beaten
1/2 cup Greek yoghurt
Pinch Salt n pepper
Method
1. Preheat oven 200 C 180 C fan-forced. Lightly grease a non stick muffin pan
2. cut each if the sheets if pasty into six squares. Press iinto muffin tray.
3. Divide ham and chives between pastry bases.
4. Put ricotta, parmesan, eggs, yoghurt, salt n pepper into a bowl and whisk together.
5. Pour mixture over ham and chives and top with a slice of tomato
6. Bake for 12 to 15 minutes or until just brown
