Ricotta Almond Pillows with Vanilla & Powdered Sugar
Ingredients
- 1 cup ricotta cheese
- 2 large eggs
- ½ cup granulated sugar
- 1 tsp vanilla extract
- ½ cup almond flour
- ¼ cup all-purpose flour
- 1 tsp baking powder
- Pinch salt
- Powdered sugar (for dusting)
Directions
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Make the Batter: In a bowl, whisk together ricotta, eggs, sugar, and vanilla until smooth. Add almond flour, all-purpose flour, baking powder, and salt. Mix until just combined.
- Shape the Pillows: Drop spoonfuls of the batter onto the prepared baking sheet, spacing them apart.
- Bake: Bake for 15-18 minutes until golden and puffed.
- Serve: Dust with powdered sugar and serve warm.
