Rissoles ingredients:
- 500g beef mince
- 2 eggs
- 2 tablespoons parsley, finely chopped
- 2 tablespoons BBQ sauce
- 1/3 cup bread crumbs
- 1/2 an onion, grated or very finely diced
- 1 teaspoon garlic, crushed
- 1 head cauliflower, broken into florets
- 1⁄4 cup parmesan, grated
- 4 tablespoons milk
- 20g butter
- Lightly steamed green beans to serve
- Mix together every ingredient for the rissoles and use your hands to shape them into balls or flattened-oval shapes. Put aside until you’re ready to cook.
- Steam the cauliflower until nice and soft, and then drain the excess water. Toss the steamed cauliflower into the food processor and add in the milk, parmesan, and butter. Mash all the ingredients until you reach your desired texture.
- Pan-fry the rissoles in olive oil and flip on each side until golden brown.
- Serve the rissoles on a bed of mashed cauliflower and with a side of lightly steamed green beans.

- 500g tinned tuna, drained
- 500ml milk
- 2 tablespoons butter
- 2 1⁄2 tablespoons plain flour
- 2 carrots, grated

- 2 tablespoons olive oil
- 1 onion, chopped
- 1 zucchini, grated
- 1 cup frozen peas
- 1⁄2 cup fresh breadcrumbs
- 1⁄2 cup cheese, grated
- Juice and zest of one lemon
- To make the cheese mixture, in a large pot, melt the butter and stir in the flour and milk while stirring. Once thickened, turn off the heat and mix in 1/4 cup of grated cheese, onion, zucchini and carrot.
- In a baking dish, layer the tuna, cheese mixture, peas, and top with remaining grated cheese.
- Mix together the breadcrumbs, parsley, lemon juice and zest in a small bowl. Sprinkle this mixture over the top and drizzle with olive oil.
- Preheat the oven and bake the dish at 180 degrees celsius for 25 minutes or until bubbling and golden in colour.
- Serve with steamed veggies or a salad on the side.
