Revamp Your Dinners with These Budget-Friendly Classics

With the rising cost-of-living, many are looking for ways to save without sacrificing comfort and quality.

These classic meals have been tweaked just a little but you’ll surely still find yourself comforted by familiar flavours and nourished with budget-friendly ingredients that won’t break the bank.


Rissoles

Rissoles may look like a regular burger patty, but it is packed with flavour with a side of tasty veggies. They’re typically served with mashed potatoes, but this twist makes it a little lighter because it uses mashed cauliflower.

Rissoles ingredients:
  • 500g beef mince
  • 2 eggs
  • 2 tablespoons parsley, finely chopped
  • 2 tablespoons BBQ sauce
  • 1/3 cup bread crumbs
  • 1/2 an onion, grated or very finely diced
  • 1 teaspoon garlic, crushed
Cauliflower mash ingredients:
  • 1 head cauliflower, broken into florets
  • 1⁄4 cup parmesan, grated
  • 4 tablespoons milk
  • 20g butter
  • Lightly steamed green beans to serve
Method:
  1. Mix together every ingredient for the rissoles and use your hands to shape them into balls or flattened-oval shapes. Put aside until you’re ready to cook.
  2. Steam the cauliflower until nice and soft, and then drain the excess water. Toss the steamed cauliflower into the food processor and add in the milk, parmesan, and butter. Mash all the ingredients until you reach your desired texture.
  3. Pan-fry the rissoles in olive oil and flip on each side until golden brown.
  4. Serve the rissoles on a bed of mashed cauliflower and with a side of lightly steamed green beans.

Tuna Mornay

The trick in making Tuna Mornay is that veggies could be hidden within the dish. You can also switch out tinned tuna for your choice of fish as you wish.

Ingredients:
  • 500g tinned tuna, drained
  • 500ml milk
  • 2 tablespoons butter
  • 2 1⁄2 tablespoons plain flour
  • 2 carrots, grated
  • 2 tablespoons parsley, chopped
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 zucchini, grated
  • 1 cup frozen peas
  • 1⁄2 cup fresh breadcrumbs
  • 1⁄2 cup cheese, grated
  • Juice and zest of one lemon
Method:
  1. To make the cheese mixture, in a large pot, melt the butter and stir in the flour and milk while stirring. Once thickened, turn off the heat and mix in 1/4 cup of grated cheese, onion, zucchini and carrot.
  2. In a baking dish, layer the tuna, cheese mixture, peas, and top with remaining grated cheese.
  3. Mix together the breadcrumbs, parsley, lemon juice and zest in a small bowl. Sprinkle this mixture over the top and drizzle with olive oil.
  4. Preheat the oven and bake the dish at 180 degrees celsius for 25 minutes or until bubbling and golden in colour.
  5. Serve with steamed veggies or a salad on the side.
Curried Sausages

Curried sausages are a classic way to revamp your dinner and incorporate veggies into a sausage dinner. Don’t hesitate to change up the chutney you’re using.

Ingredients:
  • Pork or beef sausages
  • 500ml chicken stock
  • 2 carrots, peeled, thinly sliced
  • 2 teaspoons crushed garlic
  • 1 large onion, thinly sliced
  • 1 tablespoon curry powder
  • 4 tablespoons fruit chutney (spice things up by using chilli or mango chutney)
  • 1 cup frozen baby peas
  • Fresh parsley or coriander sprigs, to serve
  • Mashed potato, to serve
Method:
  1. Cook your sausages in a large frying pan until browned all over, remove from the pan and slice diagonally, then set aside.
  2. In the same pan, add the onion, garlic, and carrots. Cook on medium heat until ingredients begin to soften, then toss in the curry powder and mix through before adding the chutney and the stock.
  3. Bring to a simmer then place the sausage pieces back in. Cook for 10-15 minutes or until the sauce is thick and reduced a little.
  4. Add in the peas and stir, then serve on a bed of mash with fresh herbs on top.

Apricot Chicken

Apricot chicken is a great way to revamp your typical chicken dinner. A good tip for some texture is to use dried apricots or tinned apricots (and other dried fruits you like) instead of (or in addition to) the nectar. Don’t forget to add fresh herbs to finish!
