Red Velvet Cup cakes

We all need to feel spoilt sometimes and this is the perfect cake to indulge.

Makes 12
Prep time 25 min
Cooking time 20 min

Preheat oven 180 C or 160 fan forced
Line a 12 cup muffin tin with liners or muffin cases

Ingredients

2 cups plain flour
2 tablespoons cocoa powder
pinch salt
1 caster sugar
1 1/4 cups vegetable oil
2 eggs
1 teaspoon vanilla essence
1 tablespoon red food colouring
1 cup buttermilk ( no substitute)
1 tablespoon white vinegar
1 1/2 teaspoon bi carb soda

Cream frosting
250g packet cream cheese
125g butter or 1/2 cup
3/4 cup icing sugar


Method
1. In a large bowl, sift together flour, cocoa poder and salt.

2. using an electric mixer , on medium speed beat , sugar and oil together. Add eggs one at a time, mixing well after each addition. Add vanilla and red colouring, mixing well until combined. Gradually add dry ingredients to the bowl , alternating with butter milk. Mix well after each addition.

3. combine vinegarand bi carb soda in a small bowl. Stir until mixture bubbles slightly. Add to batter and stir until combined.

4. spoon mixture into muffin pan , filling to 3/4 of the way. Bake in oven for 20 min
Or until a skewer comes out clean.
Cool on a wire rack before frosting.

Cream  Frosting

Using an electric mixer, cream together the cream cheese and butter until light n fluffy. Slowly add the icing sugar until incorporated. I sometimes add a tablespoon of fresh lemon juice .

pipe the frosting on top of cakes I will sometimes use one cake and crumb it abd add these crumbs to top of cream cheese. See photo
