Recipe for the PERFECT guilt-free midday snack – rice paper skewers with simple satay sauce!

Rice paper rolls are usually enjoyed best when paired with protein sources such as chicken, beef, prawns, and even fresh raw veggies and rice noodles.
They are quick, simple, and easy to make, and are the perfect dishes whenever you're in the mood for a light dinner or a meal on the run.
But did you know that rice paper is not only an "edible wrapper" for making fresh rolls, but you can also enjoy it on its own?
Here, a home cook shows us how!
Victoria Minell, a foodie based in Sydney, shared an easy-to-make recipe on her TikTok page making use of rice paper as the main ingredient.

If you like to do this recipe as well, here are the ingredients you will need:
- 6 Rice paper sheets
- 2tbsp Peanut butter
- 1tsp Honey
- 1tsp Cumin
- 1tsp Sriracha
- 1tsp Soy sauce
- 1tsp Kecap manis (sweet soy sauce)
- 1tsp Lime juice
- 1/4 cup Coconut cream
- Chilli flakes
- Sesame seeds
And here's how to do the recipe:
First, wet the rice paper sheets and roll them into long spring roll-like shapes with your hands. Once you have 6 sheets rolled out, cut them in half with scissors to create 12 shorter rolls then place them onto skewers.
To create that mouthwatering satay glaze, combine two tablespoons of peanut butter and one teaspoon of honey in a small bowl. Then add a teaspoon of cumin, sriracha, soy sauce, kecap manis, lime juice and a quarter cup of coconut cream into the bowl and mix them all well.
Place the skewers into a hot pan with oil and brush the satay sauce straight onto the rice paper rolls, just like a BBQ.
Let the skewers cook until they're golden and crispy.
Once done, place them on a plate and top with chilli flakes, sesame seeds, lime, and a small pot of your homemade satay sauce.
Serve and enjoy!
Victoria's recipe video on TikTok managed to gain over 2.7M views in less than a week since posting, with thousands of users liking and commenting that they can't wait to try out the recipe.
"I will be making these!" wrote one user, who suggested that replacing the honey with maple syrup will make the dish vegan.
"These look absolutely delicious! YUM," wrote a second, while a third agreed and said: "I made these and my whole family love them and want me to make them again!"
