Raw Carrot Cake Balls

I make these so often and they never last long, but you can freeze them -apparently!

Ingredients:
6 to 8 dates
2 medium sized carrots, grated
1 tbsp crushed walnuts (omit if it's an issue; measure after crushing)
1 tbsp diced raisins (measure after dicing)
1 cup desiccated coconut - divided into half cups.
2 tsp honey if you like extra sweetness
2 tbsp melted coconut oil (can use copha)

Method:
Set aside half of the coconut and blend all the other ingredients quickly, so as not to lose all the carrot texture. Stir in a little more coconut oil if too dry. Form into bite-sized balls and roll in the remaining coconut. Set in the fridge. If you live in FNQ (Far North QLD), your oil will almost always be a liquid, but southerners will need to warm their coconut oil by standing a small bowl of it in some hot water.

Serve on a plate, decorated with some fresh mint and rosemary if you have it.

I suppose you cut your dates into fine pieces . I usually soak them a few minutes in hot water , so it is easier to mix them with the remaining ingredients. May use less oil , as the dates will be moist after being soaked .
I made a healthy carrot cake recently , no oil or butter added , but had a few raisins, which made it very moist . Cream cheese on top with small pieces of walnuts . Also freezes very well . Yum .
