Ratatouille

Ratatouille is a classic French dish that is not only delicious but also healthy. It’s a great way to use up leftover vegetables and can be served as a main meal or a side dish. This dish is usually made with a combination of eggplant, zucchini, tomatoes, and onions. We think it’s best served with a nice piece of toast!


Ingredients:

1 eggplant, chopped

1 zucchini, chopped

1 onion, chopped

2 garlic cloves, minced

1 tablespoon olive oil

1 (400g) can diced tomatoes

1 teaspoon salt

1/4 teaspoon pepper

1 teaspoon dried oregano

1 teaspoon dried basil

A few slices of bread


Method:

1. In a large pot, sauté eggplant, zucchini, onion, and garlic in olive oil.

2. Add diced tomatoes and bring to a boil.

3. Simmer for 10 minutes, or until the vegetables are cooked through.

4. Season with salt, pepper, oregano, and basil.

5. Pop your bread in a toaster.

5. Serve as a main meal with a side of toast.
