Raspberry Muffins

1 1/2 cups S/R flour
1/4 cup sugar
200gr plain natural yoghurt
2 tablespoons light olive oil
1 egg
1 cup fresh or frozen raspberries

In a large bowl, add the flour and sugar and mix together.
In a separate bowl, add the yoghurt, oil, egg and raspberries and mix together.
Add the wet mixture to the flour and sugar mixture and stir until combined.
Spoon into muffin tin.
I use 1/4 measuring cup in each. It makes 11 muffins.
Bake in 180 degrees FF for 20 - 25 minutes ... or until cooked.

* I used these muffin paper cases that don't stick.

These muffins are very similar as the ones I make and We love them .
I use : 2 cups s/r flour

1/2 cup skim milk
2 mashed bananas
1/2 punnet raspberries or 100 g frozen.

Mix in with a wooden spoon , raspberries last and I use silicone muffin cups , no need to oil them and reusable.
I like to put on top a little unsweetened grated coconut and a tiny bit os coconut sugar.
There is no need to add sugar or other sweetness as the bananas are sweet enough of natural sweetness .
I got 14 out of that batch , cook in oven for 20- 25 min on 180 degrees.

I took them to morning tea at a friends place , they loved them and put some in the freezer as well.

They are! With added bananas plus no added sugar. My friends love them too for morning tea.

What brand of silicone muffin cups did you buy? I've tried silicone before and I find the silicone taste can leach into food I've cooked.

I’m sure you love them , they are the perfect snack and so quick and easy to make . Also the raspberries are reasonable in price at the moment , but I do change them with strawberries , blueberries, mixed berries and apple as well . I usually add a little cinnamon to the dough as well. So versatile.

About the silicone cups I bought them around Christmas time , probably more than 10 yrs ago as the colours are red and green .
I also make copycat Twix bars in them , they will be round of course .
First I made them into bars and after I cut them , the chocolate broke into a few pieces , tasted very well but not so good on presentation. Since then I make them in my silicone muffin cups and get individual pieces and it looks very good .
