Raspberry Fool

This has got to be one of the easiest summer desserts possible. It is light and
refreshing, yet served in a nice glass it can look like an amazing desert
You can use any berries as an alternative.
Serves: 8
Prep Time: 10 minutes, plus 15 minutes resting

Ingredients:
3 cups raspberries, fresh or thawed from frozen
¼ cup white sugar
1 tsp lemon juice
500ml cream
1 tsp vanilla extract
1 tbsp icing sugar
½ cup crushed plain sweet biscuits (optional)
Method:
• Place berries, sugar and lemon juice in a bowl and mix.
• Gently mash some of the berries with the fork.
• Set aside for 15 minutes until the fruit softens and some of the juice is released.
• Pour the cream into a clean bowl and add the vanilla and icing sugar.
• Beat the cream until whipped.
• Place a spoonful of the berry mixture into the bottom of four serving glasses,
then a spoonful of whipped cream and a layer of biscuit crumbs.
• Repeat the layers, ending with a sprinkle of the biscuit crumbs. If making ahead
of time, don’t put the last layer of crumbs on until just before serving.
• Keep in the fridge until ready to serve.
