Quick n Easy Apricot Chicken

This is a different version of apricot chicken , I usually use apricot nectar , then one day I didn't have any and I was glad I didn't as this version is absolutely delishes

Prep Time: 5 minutes
Cooking Time: 30–40 minutes
Ingredients:
8 chicken pieces of choice
3 tbsp apricot jam
2 tbsp soy sauce
1 tbsp sweet chilli sauce
pinch mixed spice (optional)
1 tbsp cornflour
Method:
• Preheat oven to 180°C 160 ° C fan forced
• Place chicken in a single layer in a baking dish.
• Mix remaining ingredients in a bowl and brush over the chicken.
• Bake for 30–40 minutes or until juices run clear.
• Delicious served with rice and steamed vegetables. Or mashed potato
