Quick cajun fish tacos

With just a few ingredients and a few minutes, you can whip up a mouthwatering dish. These Mexican-style fish tacos are taken to a whole new level with a generous sprinkling of Cajun seasoning, infusing them with a zesty and spicy kick. But that's not all - this dish also brings a healthy twist. With fresh fish and a medley of colourful veggies, you can satisfy your cravings guilt-free.
Ingredients:
600g Australian barramundi fillets
1 tbsp Cajun seasoning
1 tbsp olive oil
350g packet kale slaw mix
2 pickled jalapeño chillies
220g packet of pre-chopped fresh pineapple
2 limes
8 mini flour tortillas
Fresh coriander sprigs to serve
Instructions:
Heat a large deep frying pan over medium-high heat.
While the pan is heating, prepare the fish by removing the skin and cutting the flesh into 2-3cm pieces. Transfer to a bowl. Add Cajun seasoning and oil, and toss to combine.
Cook half of the fish in the heated pan, turning gently, for 2-3 minutes or until cooked through. Transfer to a bowl. Repeat with the remaining fish.
Meanwhile, prepare the kale slaw according to the packet instructions. Set it aside. Slice the jalapeño and place it in a small bowl with the pineapple. Cut limes in half and squeeze 1-half over the pineapple mixture. Toss to combine.
Warm the flour tortillas in the microwave. Divide the slaw among the tortillas and top with the cooked fish and pineapple salsa. Sprinkle with coriander.
Serve with the remaining lime halves.
Optional ways to make this dish extra special:
1. Add a dollop of sour cream to the tacos.
2. Serve the tacos with a side of guacamole or a simple salsa.
