Quick and Easy Egg Drop Soup

Are you looking for an easy-to-cook dinner that is also incredibly flavourful? Egg Drop Soup might just be the ultimate comfort food. Also known as Chinese Egg Soup, it is a fantastic way to mix up your dinner routine. Not only is Egg Drop Soup incredibly tasty and full of flavour, it is also really simple to make.
Ingredients
2 tsp olive oil
2 tsp finely grated fresh ginger
1 garlic clove, crushed
4 cups of reduced-salt chicken stock
2 fresh corn cobs, kernels removed
1 tbsp salt-reduced soy sauce
2 tsp cornflour, mixed with 1 tbsp cold water
4 eggs, lightly beaten
Sliced shallots, to serve
Sesame oil, to drizzle (optional)
Directions
Heat the olive oil in a large saucepan over medium heat. Cook ginger and garlic, stirring, for 1 minute or until fragrant.
Add stock and bring to the boil. Reduce heat and simmer for 3 minutes. Once your soup simmers, stir in your corn, soy sauce and a pinch of salt to bring out the flavour. Allow this to cook for a few minutes before adding the cornflour mixture and stirring until the soup has a thicker consistency.
Next, get ready to poach your egg into the soup. To do this, lightly beat your four eggs in a bowl, slowly pour them into your soup and stir continuously in a circular motion. When all of the egg mixture has been added, remove from heat.
Serve the soup topped with sliced shallots and a drizzle of sesame oil and/or soy sauce.
