Pumpkin Balls

This is a traditional recipe from a tiny Greek Island and is a family favourite

Ingredients

500g of peeled pumpkin Grated and squeeze the liquid out ,using just your hands is ok
1 onion grated
1 tomato grated or diced finely
1 tablespoon of chopped Mint
1 tablespoon of chopped Parsley
1/2 cup plain flour + 1/4 cup extra for rolling
1/2 cup bread crumbs
1/2 cup Regato cheese grated
1/2 teaspoon each salt n pepper
1/2 teaspoon of cumin powder
1 egg
1/4 cup olive oil for frying

Method

1. In a bowl add all ingredients and squeeze mixture together. Then form into small balls a bit bigger than a large walnut

2. Roll balls in extra flour to lightly coat

3. Heat oil in a pan and add pumkin balls.

4. cook turning a few times until golden

Serve as a side or as a main with salad.
Also goes well with Tzatziki

I used to make something similar some time ago - this recipe is a bit different to the one I used to make and will treat the family this weekend :) thank you :)
 
Here it is -

500g pumpkin (steamed, drained and cooled)
2 free range eggs (beaten)
60 g flour
1 heaped t baking powder
pinch salt
Oil for frying
Cinnamon sugar (for sprinkling)

Method :
Mash the pumpkin
Add beaten eggs and mix
Sift the flour, baking powder and salt and add
Heat oil and drop in heaped teaspoons of batter - fry each side until browned
Drain on baking paper and sprinkle with cinnamon sugar

ENJOY !!

Any chance of substituting the pumpkin with some other nice vegetable? I hate eating pumpkin but do thoroughly enjoy it in pumpkin and carrot soup! Funny that, isn't it.

I also make these using zucchinis, you could also add grated carrot with the zucchini, using 500g all up and your substituting so follow the same steps including squeezing the water out of vegies before adding all other ingredients

Made this its nice a d made as dip tahini sauce with garlic and lemon on lebanese bread, really nice...
