Potato Salad

I make a few potato salads and this is one of my family's favourite

Ingredients:

1kg potatoes baby potatoes
1 cup finely chopped herbs (mint,, parsley)I use both
salt to taste
Dressing 1/4 cup extra virgin olive oil
1/4 cup lemon juice
1 tsp crushed garlic
1 tsp Dijon mustard
salt and pepper to taste


Method:
• Cut the potatoes to the size and shape
desired and gently boil in salted water
until just cooked. Do not overcook, as the
potatoes will go mushy.
• Drain the potatoes and place in a large
bowl.
• Combine the dressing ingredients in a jug
• Pour half of the dressing over the
potatoes, stir gently, and allow the potatoes
to
cool while marinating in the dressing
• Add the herbs and the remaining dressing
to the potatoes, and stir gently
• Serve at room temperature or chill until
ready to serve

Dear Suzanne Rose, this one is really tasty and goes well beside any meat dish. I could actually eat this dish on its own that's how good the flavour of the potatoes are. Thankyou and wishing you a great week. 🙏

Cut out the garlic, then, "YUMMY YUM YUM IN MY TUMMY TUM TUM".

Would you believe, how much I hate garlic as a food beverage, I have a very favoured use for the crushed garlic you buy from coles or woolies, in a jar. The home/own brand, cheap, does the job just fine.
I can assure you, it 'Aint" for cooking. "Yuckety Yuck Yuck.
