Pork and mango curry

Ingredients
500 grams pork strips
400 gram tin of good quality coconut cream
400 gram tin of Mangos
Half cup frozen peas
2 tablespoons of yellow curry paste
A few fresh mint leaves for garnish.
"For pork use Aldi filets
Quarter cup mango juice
Method
Scoop cream off the top of coconut cream 😋 place in med saucepan of medium heat until bubbles start throw in curry paste and reduce until half throw in juice and pork pieces with left over coconut cream and simmer 10mins throw in peas and serve with steamed Jasmine rice and mint garnish, enjoy 😉
