I love cakes and desserts with fruit in it , and this one is delicious.
This recipe is made with plums but can be substituted with Nectarines or peaches.

I made this recently using a large can of plums. I drained the plums over a sifter, and the cake was delicious. I can't wait to try with fresh plums once the price goes down,

Ingredients
- 1 cup sugar
- 4 large eggs
- 1 cup vegetable oil
- 1 tablespoon grated orange zest
- 1 teaspoon vanilla extract
- 2 cups plain flour
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 5 small plums (about 500g ), sliced ( see note below)
- Icing sugar to dust
Directions
- Preheat oven to 175°C or 155°C fan-forced
- In a large bowl, beat sugar, eggs and oil until lemon-colored and fluffy, about 5 minutes. Beat in orange zest and vanilla.
- In another bowl, whisk flour, baking powder, cinnamon and salt; fold into egg mixture. Transfer to a greased 13 x 9 inch baking pan, spreading evenly. Arrange plum slices over batter (do not press into batter).
- Bake until a toothpick inserted in center comes out clean, 40-45 minutes. Cool in pan on a wire rack. Sift icing sugar lightly on top and additional cinnamon before serving.
