Penne Pasta Bake with Roast Chicken, Mushrooms and Spinach

This dish is so easy and so delicious ( when I leave out the mushrooms 🍄 but my family loves the Mushies in it.
And it cost only $3.30 a serve.

For a smaller serving just half the ingredients.

Ingredients​

  • 500 g penne rigate pasta
  • 575 g Barilla Cheese & Tomato Pasta Bake
  • 1/2 roast whole chicken cubed deboned ( see note)
  • 2 cloves garlic chopped
  • 250 g mushrooms cut into slices
  • 1 sprig fresh rosemary
  • 200 g baby spinach
  • 100 g reggiano parmigiano cheese, grated or parmesan
  • 80 ml extra virgin olive oil
  • 1 pinch salt and pepper
  • 1 pinch rock salt

Method​

  1. Bring plenty of salted water (7g salt to 1 l of water) to the boil.
  2. In a large fry pan, gently cook garlic and mushrooms in a little oil for five minutes.
  3. Add the chicken, then spinach, and season to taste. Remove from the heat and keep to one side.
  4. Drop the penne in to the water and drain the pasta 3 minutes before the cooking time stated on the pack.
  5. Combine cooked pasta with Barilla Cheese and Tomato Pasta Bake sauce, chicken, spinach and mushrooms.
  6. Place in a large ovenproof dish, sprinkle with Parmigiano Reggiano cheese and bake in a pre-heated oven at 180 C or 160°C fan-forced for 15 - 20 minutes
    • Serve immediately.
NOTES

This is a great recipe to roast a chicken with steamed veggies the day before and use the remainder for this dish

What about michael(observer) he just spent his first night last night on a 10day trip on the Ghan heading for Darwin.lucky b missing out on this cold weather here in vic. He’s doing what you want to do s.r.👍I’m so jealous.🤣

I was telling him a few months ago I wanted to do that and he asked if I wanted to go with him. ( I don't think hubby would have liked that )

He needed to do this and to keep keeping busy

I'm hoping to do the Indian Pacific from Sydney to Perth and then fly back, later this year.

It's so cold in old Sydney town and Melbourne is even colder . You must be freezing.

he had asked a woman to go with him from a site he’s on but he said too many red flags were showing or something he’s with a lot of sites to meet people especially women.he must be lonely since his wife died.i told him he might get lucky on the train you never know. Good luck to him I say.😊

Yeh he told me about the sites , spinner or something. He meets up a couple of times a week.
He dud say he was going to do a road trip to Darwin with one of the ladies , that must have fell through
I told him to be very careful . Slow and steady wins the race.
I was supposed to go to Melbourne last month for my nieces hens weekend.
But my daughter who has had a few miscarriages is pregnant , I can say it now as she is past the worry stage.
