Pecan-crusted salmon with cauliflower mash

Pecan-crusted salmon is a twist on the traditional recipe that is sure to please. The salmon is covered in a pecan crust and then baked to perfection. The cauliflower mash is a flavorful and healthy alternative to mashed potatoes. It is made with boiled cauliflower, butter, milk, and shredded cheese. Ingredients:

400g potatoes, peeled, cut into 4cm pieces

300g cauliflower, cut into florets

60ml (1/4 cup) skim milk, warmed

60g (1 cup) fresh white sourdough breadcrumbs

35g (1/4 cup) pecans, finely chopped

2 tbsp chopped fresh continental parsley

1 tbsp Dijon mustard

2 tsp honey4 (about 125g each) skinless salmon fillets

Olive oil spray

Steamed green round beans to serve

Steamed broccolini, to serve

Instructions:

1. Cook potatoes in a large saucepan of boiling water for 7 minutes; add cauliflower, and cook for 8 minutes or until both vegetables are tender.

2. Drain vegetables and return to pan. Add milk and mash until smooth.

3. Preheat oven to 200°C. Line a baking tray with baking paper.

4. Combine breadcrumbs, pecans, parsley, mustard and honey in a bowl.

5. Place salmon on the prepared tray—spoon over breadcrumb mixture, pressing gently to adhere. Spray with oil.

6. Bake for 8 minutes or until salmon is cooked through.

7. Divide mash and salmon among serving plates. Top with green beans and broccolini.

To make this dish more special, you can

-Add a dollop of pesto to the mash
-Use herbed breadcrumbs in the crust
-Bake the salmon on parchment paper for easy cleanup

I use I whole cauliflower stems as well to 2 large potatoes - when cooked mash with 2 large spoons of natural yoghurt, salt and pepper mash or process until smooth.
