Pear and Nut Muffins

Ingredients
- 1 1/2 cups wholemeal self-raising flour
- 1/2 cup brown sugar
- 1 1/2 tbs mixed spice
- 1/4 cup linseeds *optional
- A handful sunflower seeds *optional
- A handful almonds *optional
- 3 eggs lightly beaten
- 4 tbs olive oil
- 2 cups pear chopped
- 3/4 cup mixed nuts chopped
- 1/4 cup sunflower seeds optional
- 1 tsp ground cinnamon
Method
- Preheat oven to 180C / 160C fan-forced
- Sift flour, sugar and spice into mixing bowl
- Add nuts, seeds and pears, eggs and oil. Mix all together.
- Spoon into muffin 12 large muffin pans or 24 small muffin pans
- Bake at 180C for approximately 15 minutes or until browned.
- Rest for 5 minutes, then transfer to cooling rack and dust with cinnamon.
