Peanut Butter Cookies

I love peanut butter cookies and remember making them at school.
But due to Peanut Allergies in my family I no longer make them and they arr so much better than shop bought ones.

Makes 24
Prep time 10 min
Cook time 15 minutes

Ingredients​

  • 1/4 cup brown sugar
  • 1/4 cup caster sugar
  • 1/2 cup butter, melted
  • 1/2 cup peanut butter
  • 1 egg
  • 1 1/2 cups self-raising flour
  • 1 tsp vanilla essence

Method​

  1. Combine sugars.
  2. Add melted butter and lightly beaten egg. Mix well.
  3. Gradually add sifted flour and remaining ingredients, mixing thoroughly.
  4. Place teaspoonfuls of mixture onto a greased tray, flattening with a fork.
    Bake for about 12-15 minutes at 160C or 140C Fan-forced
Notes : you can add 1/4 cup of either white, milk or dark chocolate chips to add a variation.

I had that WW Beautiful Biscuits book too. I gave all those WW recipe books to my daughters.
I just purchased a lot of women's weekly cook books from life line in QLD , and some really good ones at that.
Women's weekly cook books that I didn't know existed and mostly thick hard covered books.
I couldn't believe how cheap they were.

I was also able to buy a book I've had for 40 years which has fallen apart. The step by step women's weekly , a large hard covered book red which was the book I started cooking from .

That’s quite a collection of Women’s Weekly cookbooks! Not to mention all the other cookbooks you have!

I don’t have most of my cookbooks anymore, but couldn’t bring myself to get rid of this cookbook I got for Xmas 1965. I’m trying to send a pic of the old book, but keep getting the message that it’s too large for the server. I’ll work on it but may not get it sent until tomorrow.
