Pea and herb fritters with creamy avocado dressing

Say hello to your new favourite meal! These pea and herb fritters are delicious and super easy to make. Made with just simple ingredients, they come together in no time and make the perfect light meal or snack.

Ingredients:

300g frozen peas
2 eggs
80ml (1/3 cup) Milk of choice
55g (1 ⁄3 cup) wholemeal spelt flour
100g baby spinach
75g feta, crumbled
2 tbsp chopped fresh mint leaves
2 tsp finely grated lemon rind
1 avocado
2 tbsp fresh lemon juice
2 tbsp natural yoghurt
4 radishes, sliced
Lemon wedges to serve

Instructions:

1. Boil the peas in a large saucepan of boiling water for 3 minutes or until tender. Rinse under cold water. Drain. Transfer to a bowl and mash with a fork.

2. Whisk the eggs and milk in a bowl. Add the flour and whisk until well combined. Stir in the peas, spinach, feta, mint and lemon rind. Mix well to combine.

3. Heat 1 tablespoon of oil in a large non-stick frying pan over medium heat. Spoon 2 tablespoonfuls of fritter mixture into the pan. Cook for 2 minutes on each side or until golden and cooked through. Transfer to a plate lined with a paper towel. Repeat with the remaining batter.

4. To make the dressing, combine the avocado, lemon juice, and yoghurt in a food processor—season with salt and pepper.

5. Divide the fritters among plates. Top with radishes, avocado dressing and lemon wedges. Enjoy!

To make this dish more special:

-Serve with a side of crispy bacon or grilled chicken

-Top with a fried egg

-Add some spice with a pinch of chilli flakes

Also, if you make it and the batter looks a bit thick, add a bit more milk and flour till the batter is a pouring consistency, not too runny!!
