Parmesan and Dijon-crusted chicken

Ingredients:
3 slices of white bread
1/4 cup fresh parsley, roughly chopped
2 tbsp shredded parmesan cheese
2 medium chicken breasts (600g), pounded to 1cm thickness
1 tbsp dijon mustard
3 tbsp olive oil
1/2 small red onion, thickly sliced
1 tbsp baby capers, drained
250g green beans, ends trimmed, cut into 3cm pieces
1/2 lemon, juice only
Method:
1. In a food processor, pulse bread slices until they form coarse crumbs. Transfer to a bowl and stir in parsley and parmesan.
2. Place chicken breasts on a plate. Coat each chicken breast with dijon mustard.
3. Press the chicken into the bread crumb mixture, and coat each one evenly.
4. Place a medium pan of salted water over high heat and bring it to a boil. Add green beans and cook for 2 minutes. Drain and set aside.
5. Heat olive oil over a large frying pan over medium heat. Add chicken breasts and cook for 3 minutes on each side or until golden and cooked through.
6. Serve and top with green beans and capers.
To make this dish more special, you can use any type of cheese you like. The options are endless! You can also add other herbs and spices to the breadcrumb mixture. Get creative and experiment with different flavours.
